In 2017, Mancuso founded a jazz fusion trio called "SNIPS," consisting of Salvatore Lima on drums and Riccardo Oliva on bass. SNIPS focuses on rearranging popular fusion standards and creating original compositions. The trio has performed at various events such as Musika-Expo in Rome and Musikmesse in Frankfurt.

Mancusos playing style is distinctive as he favors a finger-style right hand technique, using a rest stroke with his index and middle fingers. This approach, resembling that of a classical guitarist, has earned him praise as a virtuoso. His talent has caught the attention of fellow musicians, with Tosin Abasi referring to him as "a virtuoso beyond virtuosos."
As of now, Mancusos discography includes the upcoming release of his first credited albums, with "THE EVENT - Live In Lugano Estival Jazz 2022" by PFM and "The Journey" by Matteo Mancuso Trio set to be published in 2023.
